Rhubarb quick refrigerator pickles

Rhubarb refrigerator pickles

Ingredients:
  • 2 1/2 pounds rhubarb stalks
  • 1 1/4 cups sugar
  • 1 3/4 cups cider vinegar
  • 2 1/2 tablespoons coarse sea salt
  • 1 tablespoon coriander seeds
  • 1 tablespoon black peppercorns
  • 4 small dried chiles, such as chile de árbol
  • 4 bay leaves

Method:

·         Have 4 pint (16-ounce) jars with lids ready. Split rhubarb stalks lengthwise and use a vegetable peeler to remove the tough stringy skin. Cut rhubarb into lengths that fit into the jars with just a little space at the top; fill jars evenly with rhubarb.

Combine sugar, vinegar, salt, coriander, peppercorns, chiles, bay leaves and 3 cups water in a large saucepan, and bring to a boil. Lower heat and simmer 3 minutes. Remove from heat and ladle liquid into the jars, placing 1 chile and 1 bay leaf in each. Cool, cover and refrigerate for at least 1 day. Will keep refrigerated for a month or more.

Julia's healthy homemade granola

1/2 to 3/4 cup of liquid honey
1/2 cup of oil
1 tablespoon natural vanilla
1/2 teaspoon of salt

1. Melt these 4 first ingredients over stove in a small saucespan.
2. Pour into a large roasting pan (a big one like for roasting a turkey!!)

3. Add these ingredients to large roasting pan:
1/2 cup of sesame seeds
1 cup of wheatgerm
2 cups of unsweetened coconut
7 cups of uncooked oatmeal flakes
*Now here is what I love: Add anything but the kitchen sink: raisins, chopped up dried apricots, cranberries, nuts, sunflower seeds, peanuts, etc. Whatever you have in the pantry. You get a different reicpe every time.

Bake in the oven at 350 degrees. Stir every 10 minutes for about 45 minutes.

Enjoy as your main cereal, on other cereals, yogourt, etc.

Mix these last ingredients into a large roasting pan.
Pour the melted sauce mixture over and cereals, peanuts and pretzels.

Doris' rum balls

My friend, Peter, and I used to steal as many of these as we could off the buffet table, pop them in our mouths and try to act drunk. We had no idea that for all their flavour, there was only a quarter cup of rum in a whole recipe.

I found Mom's recipe last week and made them for the first time today. They taste like a part of my childhood. What does that say about my chilhood? I have no idea but here is this easy to make awesome recipe.

1 cup of vanilla wafers finely crushed (I live in the country so I had to make do with honey graham crumbs
1 cup of confectioner's sugar
1 and 1/2 cups of nuts (chopped our ground) I used my coffee grinder.
2 tablespoons of cocoa

Combine these ingredients in a bowl.

Add 2 tablespoons of corn syrup
and 1/4 cup of rum to the mixture.

Shape into 1 inch balls and roll into granulated sugar.

Enjoy!
